Pumpkin Bars

These pumpkin bars were fabulous when they were made in Polish Pottery. I used the “11 x 13″ rectangular baker ( item number p105), and it was Fabulous!

  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg *
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 4 eggs
  • 1 and 2/3 cups sugar
  • 1 cup oil
  • 1 can (15oz) pumpkin (not pumpkin pie filling)


Sift dry ingredients (flour, baking powder, cinnamon, nutmeg, salt & soda) and set aside. In a large bowl, combine eggs, sugar, oil and pumpkin until light and fluffy. Add the dry ingredients, gradually. Mix well.

Spread batter in a greased 15x10x1 baking pan. Bake at 350 degrees for 25 – 30 minutes or until a toothpick inserted comes out clean. Cool completely.


  • 1 8oz. package of cream cheese *
  • 1/3 cup softened butter
  • 4 cups powdered sugar
  • 2 tsp pure vanilla extract
  • 1 Tbsp milk

Cream together butter and cream cheese until smooth and fluffy.  Add powdered sugar, vanilla and milk.  Mix on high speed until smooth creamy.

* The nutmeg is an optional, but tastey  ingredient.

* The original frosting recipe only called for 3 oz of cream cheese.  It was suggested to make the recipe using 8 oz. of cream cheese, and it was the perfect amount on the bars.

Guru Tips:

I used the largest in the nested set of our Polish Pottery Bakers (Item Number P105) in the “Sunshine Grotto” pattern.  This piece measures 10″x13″ and it was absolutely perfect for this recipe! I received rave reviews, and I highly recommend this recipe in this dish!  It comes in many different patterns, and I love the entire nested set of rectangular bakers.

This makes storage of multiple baking dishes a dream! Mix and match different patterns and they will make you happy every time you open the cabinet.

( I had a customer buy a set this week who commented, “I have no idea what I am going to bake in these, but I love to look at them stacked without food in them!”)  I am a firm believer in making an extra and freezing it for future stress-free entertainment, and having these three in the pantry make it possible to prepare ahead for different sized groups!

Baking anything in the Polish Pottery produces a more moist, evenly baked treat. The lack of lead and cadmium makes this stoneware the perfect baking dish because there are no hot-spots.
