Here at The Polish Pottery Outlet in the Denver area we carry beautiful pie plates with handles. We get rave reviews from people about the flakey pie crusts and moist fillings our pottery produces time after time. This dish is also great for casseroles and side dishes of all kinds.  I always say, if I am going to take time to bake, it should be the best; that only happens when I bake in Polish Pottery.

Kathleen Nelson brought a BIG SMILE to all of our faces when she waltzed into The Polish Pottery Outlet with this delicious pie for all of us!!! Lucky for all of us, she shared the recipe!!!

Rhubarb Custard Pie

• 4 Cups cut-up rhubarb (cut in 1″ pieces)

• 1  1/2  to 1  3/4 Cups Sugar

• 1/4 Cup flour

• 2 TBLS. half & half or milk

• 2 tsps nutmeg

• 3 eggs

• butter (optional)

Mix everything together except for the rhubarb. When mixed, pour over rhubarb and mix well.

Pour into 9″ pie pan lined with a crust.  Add a lattice top, if desired. Place pieces of butter on top before putting in the oven.

Bake at 400 degrees for 55 to 60 minutes or until crust is golden.

Let cool—Eat—Enjoy!!!
